Oatmeal Lace Rounds
Ingredients

165g/2/3 cup butter or margarine

130g/1 1/4 cups quick-cooking porridge oats

170g/3/4 cup dark brown sugar

155g/2/3 cup caster sugar

30g/1/3 cup plain flour
-
1.5ml/1/4 tsp salt

1
egg, lightly beaten
-
5ml/1 tsp vanilla essence

65g/generous 1/2 cup pecan nuts or walnuts, finely
chopped
Method:

Preheat
the oven to 180C/350F/Gas 4. Lightly
grease two baking sheets.

Melt the butter
or margarine in a saucepan over a low heat. Set
aside. In a mixing bowl, combine the oats, brown
sugar, caster sugar, flour and salt. Make a well in
the centre and add the butter or margarine, egg and
vanilla. Mix until blended, then stir in the chopped
nuts.

Drop rounded
teaspoonfuls of the mixture about 5cm/2in apart on
the prepared baking sheets. Bake in the oven until
lightly browned on the edges and bubbling all over,
about 5-8 minutes. Cool on the baking sheets for 2
minutes, then transfer to a wire rack to cool
completely.
