Biscuits, Bars And Cookies Recipes - Oatmeal Lace Rounds

Ingredients

  • 165g/2/3 cup butter or margarine

  • 130g/1 1/4 cups quick-cooking porridge oats

  • 170g/3/4 cup dark brown sugar

  • 155g/2/3 cup caster sugar

  • 30g/1/3 cup plain flour

  • 1.5ml/1/4 tsp salt

  • 1 egg, lightly beaten

  • 5ml/1 tsp vanilla essence

  • 65g/generous 1/2 cup pecan nuts or walnuts, finely chopped


Method:

  1. Preheat the oven to 180C/350F/Gas 4. Lightly grease two baking sheets.

  2. Melt the butter or margarine in a saucepan over a low heat. Set aside. In a mixing bowl, combine the oats, brown sugar, caster sugar, flour and salt. Make a well in the centre and add the butter or margarine, egg and vanilla. Mix until blended, then stir in the chopped nuts.

  3. Drop rounded teaspoonfuls of the mixture about 5cm/2in apart on the prepared baking sheets. Bake in the oven until lightly browned on the edges and bubbling all over, about 5-8 minutes. Cool on the baking sheets for 2 minutes, then transfer to a wire rack to cool completely.
