Biscuits, Bars And Cookies Recipes - Oatmeal and Date Brownies

Ingredients

  • 150g/5oz plain chocolate

  • 50g/4 tbsp butter

  • 75g/scant 1 cup quick-cooking porridge oats

  • 25g/3 tbsp wheat germ

  • 25g/1/3 cup milk powder

  • 2.5ml/1/2 tsp baking power

  • 2.5ml/1/2 tsp salt

  • 50g/1/2 cup chopped walnuts

  • 5og/1/3 cup dates, chopped

  • 50g/1/4 cup molasses sugar

  • 5ml/1 tsp vanilla essence

  • 2 eggs, beaten


Method:

  1. Break the chocolate into a heatproof bowl and add the butter. Place over a pan of simmering water and stir until completely melted.

  2. Cool the chocolate, stirring occasionally. Preheat the oven to 180C/350F/Gas 4. Grease and line a 20cm/8in square cake tin.

  3. Combine all the dry ingredients together in a bowl, then beat in the melted chocolate, vanilla and eggs. Pour the mixture into the cake tin, level the surface and bake in the oven for 20 - 25 minutes until firm around the edges yet still soft in the centre.

  4. Cool the brownies in the tin, then chill in the fridge. When they are more solid, turn them out of the tin and cut into 16 squares.
