Recipes - Oatmeal and Date Brownies
Ingredients
150g/5oz plain chocolate
50g/4 tbsp butter
75g/scant 1 cup quick-cooking porridge oats
25g/3 tbsp wheat germ
25g/1/3 cup milk powder
2.5ml/1/2 tsp baking power
2.5ml/1/2 tsp salt
50g/1/2 cup chopped walnuts
5og/1/3 cup dates, chopped
50g/1/4 cup molasses sugar
5ml/1 tsp vanilla essence

eggs, beaten
Method:
Break the
chocolate into a heatproof bowl and add the butter.
Place over a pan of simmering water and stir until
completely melted.
Cool the
chocolate, stirring occasionally. Preheat the oven
to 180C/350F/Gas 4. Grease and line a 20cm/8in
square cake tin.
Combine all the
dry ingredients together in a bowl, then beat in the
melted chocolate, vanilla and eggs. Pour the mixture
into the cake tin, level the surface and bake in the
oven for 20 - 25 minutes until firm around the edges
yet still soft in the centre.
Cool the brownies
in the tin, then chill in the fridge. When they are
more solid, turn them out of the tin and cut into 16
squares.
