Biscuits, Bars And Cookies Recipes - Oat And Apricot Clusters

Ingredients

  • 50g/4 tbsp butter or margarine

  • 50g/4 tbsp clear honey

  • 50g/1/2 cup medium oatmeal

  • 50g/1/4 cup chopped ready-to-eat dried apricots

  • 15ml/1 tbsp banana chips

  • 15ml/1 tbsp dried coconut shreds

  • 50-75/2-3 cups cornflakes or crispy cereal


Method:

  1. Place the butter or margarine and honey in a small pan and warm over a low heat, stirring until well blended.

  2. Add the oatmeal, apricots, banana chips, coconut and cornflakes or crispy cereal and mix well.

  3. Spoon the mixture into 12 paper cases, pilling it up roughly. Transfer to a baking sheet and chill until set and firm.
