Ingredients

  • 65g/scant 1/2 cup blanched almonds

  • 50g/1/4 cup butter

  • 40g/1/3 cup plain flour

  • 90g/1/2 cup caster sugar

  • 30ml/2 tbsp double cream

  • 2.5ml/1/2 tsp vanilla essence


Method:

  1. Preheat the oven to 190C/375F /Gas 5. Lightly grease two baking sheets.

  2. With a sharp knife, chop the almonds as finely as possible. Alternatively, use a food processor or blender to chop the nuts very finely.

  3. Melt the butter in a saucepan over a low heat. Remove from the heat and stir in the remaining ingredients and the finely chopped almonds.

  4. Drop teaspoonfuls 6cm/2 1/2in apart on the prepared sheets. Bake until golden, about 5 minutes. Cool on the baking sheets briefly, just until the wafers are stiff enough to remove. With a palette knife, transfer to a wire rack to cool.
