Recipes - Mexican Cinnamon Biscuits
Ingredients

115g/1/2 cup butter
-
25g/2 tbsp caster sugar

115g/1 cup plain flour
-
50g/1/4 cup corn-flour
-
1.5ml/1/4 tsp ground cinnamon
-
30ml/2 tbsp chopped mixed nuts

25g/1/4 cup icing sugar, sifted
Method:

Preheat
the oven to 160'C/325 "F/Gas 3. Lightly
grease a baking sheet. Place the butter and
sugar in a bowl and beat until pale and
creamy.

Sift in the plain
flour, corn-flour and cinnamon and gradually work in
with a wooden spoon until the mixture comes
together. Knead lightly until completely smooth.

Take
tablespoonfuls of the mixture, roll into 20 small
balls and arrange on the baking sheet. Press a few
chopped nuts into the top of each one and then
flatten slightly.

Bake the biscuits
for about 30-35 minutes, until pale golden. Remove
from the oven and, while they are still warm, toss
them in the sifted icing sugar. Leave the biscuits
to cool on a wire rack before serving.
