Maple-Pecan Nut Brownies
Ingredients
115g/1/2 cup butter, melted
75g/1/2 cup light soft brown sugar
30ml/5 tbsp maple syrup
2
eggs
115g/1 cup self-raising flour
75g/3/4 cup pecan nuts, chopped
115g/2/3 cup plain chocolate chips
50g/1/4 cup unsalted butter
12
pecan nut halves, to decorate
Method:
Preheat
the oven to 180C/350F/Gas 4. Line and
grease a 25 x 18cm/10 x 7in cake tin.
Beat together the
melted butter, sugar, 60ml/4 tbsp of the maple
syrup, eggs and flour for 1 minute, or until smooth.
Stir in the nuts and transfer to the cake tin.
Smooth the surface and bake for 30 minutes, until
risen and firm to the touch. Cool in the tin for 10
minutes, then transfer to a wire rack to cool
completely.
Melt the
chocolate chips, butter and remaining syrup over a
low heat. Cool slightly, then spread over the cake.
Press in the pecan nut halves, leave to set for
about 5 minutes, then cut into bars.
