Biscuits, Bars And Cookies Recipes - Ginger Cookies

Ingredients

  • 115g/8 tbsp soft brown sugar

  • 115g/1/2 cup soft margarine

  • pinch of slat

  • few drops vanilla essence

  • 175g/1 1/2 cups whole meal flour

  • 15g/1 tbsp cocoa, sifted

  • 10ml/2 tsp ground ginger

  • a little milk

  • glace icing and glace cherries, to decorate


Method:

  1. Preheat the oven to 190C/375F. Cream the sugar, margarine, slat and vanilla essence together until very soft and light.

  2. Work in the flour, cocoa and ginger adding a little milk, if necessary, to bind the mixture. Knead lightly on a floured surface until smooth.

  3. Roll out the dough on a lightly floured surface to about 5mm/1 1/4in thick. Stamp out shapes using biscuit cutters and place on baking sheets.

  4. bake the cookies for 10-15 minutes, leave to cool on the baking sheets until firm, then transfer to a wire rack to cool completely. Decorate with the glace icing and glace cherries.
