Recipes - Ginger Biscuits
Ingredients
275g/2 1/2 cups plain flour
5ml/1 tsp bicarbonate of soda
7.5ml/1 1/2 tsp ground ginger
1.5ml/1/4 tsp ground cinnamon
1.5ml/1/4 tsp ground cloves
115g/1/2 cup butter or margarine, at room
temperature
350g/1 1/4 cups caster sugar
1
egg, beaten
60ml/4 tbsp treacle
5ml/1 tsp fresh lemon juice
Method:
Preheat the oven
to 160C/325F. Lightly grease three to four baking
sheets.
Sift the flour,
bicarbonate of soda and spices into a small bowl.
Set aside.
Cream the butter
or margarine and two-thirds of the sugar together.
Stir in the egg, treacle and lemon juice. Add the
flour mixture and mix in thoroughly with a wooden
spoon to make a soft dough.
Shape the dough
into 2cm/3/4in balls. Roll the balls in the
remaining sugar and place about 5cm/2in apart on the
baking sheets.
Bake until the
biscuits are just firm to the touch, about 12
minutes. With a platter knife, transfer the biscuits
to a wire rack and leave to cool.
