Recipes - Fudge-glazed Chocolate Brownies
Ingredients

250g/9oz bittersweet chocolate, chopped

25g/1oz unsweetened chocolate, chopped

115g/1/2 cup unsalted butter, cut into pieces

90g/1/2 cup light brown sugar
-
50g/14 cup granulated sugar

eggs
-
15ml/1 tbsp vanilla essence

65g/1/2 cup plain flour

115g/1 cup pecans or walnuts, toasted and chopped

150g/5oz white chocolate, chopped

pecan halves, to decorate
FUDGE
CHOCOLATE GLAZE
-
175g/6oz bittersweet chocolate, chopped
-
50g/4 tbsp unsalted butter, cut into pieces
-
30ml/2 tbsp corn or golden syrup
-
10ml/2 tsp vanilla essence
-
5nl/1 tsp instant coffee
Method:

Preheat oven to
180'C/350'F /Gas 4. Line a 20cm/8in square baking
tin with foil then grease the foil.

In a saucepan
over a low heat, melt the dark chocolates and
butter. Off the heat, add the sugars and stir for 2
minutes. Beat in the eggs and vanilla; blend in the
flour. Stir in the nuts and white chocolate. Pour
into the tin. Bake for 20-25 minutes. Cool in the
tin for 30 minutes then lift, using the foil, on to
a wire rack to cool for 2 hours.

For the glaze,
melt all the ingredients in a pan until smooth,
stirring. Chill for 1 hour then spread over the
brownies. Chill until set then cut into squares.
