Recipes - Farmhouse Biscuits
Ingredients
115g/1/2 cup butter or margarine, at room
temperature
90g/7 tbsp light brown sugar
65g/5 tbsp crunchy peanut butter
1
egg
50g/1/2 cup plain flour
2.5ml/1/2 tsp baking powder
2.5ml/1/2 tsp ground cinnamon
1.5ml/1/4 tsp salt
175g/1 1/2 cups muesli
50g/1/2 cup raisins
50g/1/2 cup chopped walnuts
Method:
Preheat the oven
to 180C/350G. Grease a baking sheet.
Cream the butter
or margarine and sugar until light and flurry. Beat
in the peanut butter and then beat in the egg.
Sift the flour,
baking powder, cinnamon and salt over the peanut
butter mixture and stir to blend. Stir in the
muesli, raisins and walnuts. Taste the mixture to
see if it needs more sugar, as the sugar content of
muesli varies.
Drop rounded
tablespoonfuls of the mixture on to the prepared
baking sheet about 2.5cm/1 in apart. Press gently
with the back of a spoon to spread each mound into a
circle.
Bake until
lightly colored, about 15 minutes. With a palette
knife, transfer to a wire rack to cool. Store in an
airtight container.
