Biscuits, Bars And Cookies Recipes - Easter Biscuits

Ingredients

  • 115g/1/2 cup butter or margarine

  • 75g/1/2 cup caster sugar, plus extra for sprinkling

  • 1 egg, separated

  • 200g/1 3/4 cups plain flour

  • 2.5ml/1/2 tsp mixed spice

  • 2.5ml/1/2 tsp ground cinnamon

  • 50g/4 tbsp currants

  • 15ml/1 tbsp chopped mixed peel

  • 15-30ml/1-2 tbsp milk


Method:

  1. Preheat the oven to 200'C/ 400'F /Gas 6. Lightly grease two baking sheets. Cream together the butter or margarine and sugar until light and fluffy, then beat in the egg yolk.

  2. Sift the flour and spices over the egg mixture, then fold in with the currants and peel, adding sufficient milk to make a fairly soft dough.

  3. Turn the dough on to a floured surface, knead lightly until just smooth, then roll out using a floured rolling pin, to about a 5mm/2in thickness. Cut the dough into circles using a 5cm/2in fluted biscuit cutter. Transfer the circles to the baking sheets and bake for 10 minutes.

  4. Beat the egg white, then brush over the biscuits. Sprinkle with caster sugar and return to the oven for a further 10 minutes, until golden. Transfer to a wire rack to cool.
