- Crunchy Jumbles
Ingredients
115g/1/2 cup butter or margarine, at room
temperature
225g/1 cup caster sugar
1
egg
5ml/ 1 tsp vanilla essence
150g/1 1/4 cups plain flour, sifted
25ml/1/2 tsp bicarbonate of soda
1.5ml/1/4 tsp salt
50g/2 1/4 cups crisped rice cereal
175g/1 cup chocolate chips
Method:
Preheat the
oven to 180C/350F. Grease two baking sheets. Cream
the butter or margarine and sugar until fluffy.
Add the egg and
vanilla essence. Add the flour and bicarbonate of
soda and the salt and fold in.
Add the cereal
and chocolate chips and mix thoroughly. Drop
spoonfuls 5cm/2in apart onto baking sheets and bake
for 10-12 minutes. Transfer to a wire rack to cool.
