Recipes - Chunky Chocolate Drops
Ingredients
175g/6oz plain chocolate
115g/1/2 cup unsalted butter
2
eggs
90g/1/2 cup granulated sugar
50g/1/4 cup (packed) light brown sugar
40g/1/3 cup lain flour
25g/1/4 cup unsweetened cocoa powder
5ml/1 tsp baking powder
10ml/2 tsp vanilla essence
pinch of salt
115g/1 cup pecan nuts, toasted and coarsely chopped
175g/1 cup plain chocolate chips
115g/4oz fine quality white chocolate, chopped into
5mm/1/4in pieces
Method:
Preheat
the oven to 160'C/325'F/Gas 3. Grease two
large baking sheets. In a medium saucepan
over a low heat, melt the plain chocolate
and butter until smooth, stirring
frequently. Remove from the heat to cool
slightly.
Beat the eggs and
sugars for 2-3 minutes until pale and creamy.
Gradually beat in the melted chocolate mixture.
Beat in the flour, cocoa, baking powder, vanilla and
salt, just to blend. Add the nuts, chocolate chips
and chocolate pieces.
Drop 4-6 heaped
tablespoonfuls of the mixture on to each baking
sheet 10cm/4in apart and flatten each to a round
about 7.5cm/3in. Bake for 8-10 minutes until the
tops are shiny and cracked and the edges look crisp.
Remove the baking
sheets to a wire rack to cool for about 2 minutes,
until the cookies are just set, then remove them to
the wire rack to cool completely. Continue to bake
in batches.
