Chocolate Macaroons
Ingredients
MAKES
ONE 20CM/8IN CAKE
50g/2oz plain chocolate, melted
175g/1 1/2 cups blanched almonds
225g/1 cup caster sugar
3
egg whites
2.5ml/1/2 tsp vanilla essence
1.5ml/1/4 tsp almond essence
icing sugar, fro dusting
Method:
Preheat the oven
to 160C/325F. Line two baking sheets with
greaseproof paper then grease. Grind the almonds in
a food processor or blender.
Transfer to a
bowl, then blend in the sugar, egg whites, vanilla
and almond essence. Stir in the chocolate. the
mixture
should just hold its shape; if too soft, chill for
15 minutes.
Shape the mixture
into walnut-sized balls. Place on the baking sheets
and flatten slightly. Brush with a little water;
dust with icing sugar. Bake until just firm, 10-12
minutes.
With a palette
knife, transfer to a wire rack to cool
