Recipes - Chocolate-chip Oat Biscuits
Ingredients
115g/1 cu plain flour
2.5ml/1/2 tsp bicarbonate of soda
1.5ml/1/4 tsp salt
1.5ml/1/4 tsp baking powder
115g/1/2 cup butter or margarine, at room
temperature
115g/generous 1/2 cup caster sugar
90g/generous 1/2 cup light brown sugar
1
egg
2.5ml/1/2 tsp vanilla essence
75g/1/2 cup rolled oats
175g/1 cup plain chocolate chips
Method:
Preheat the oven
to 180C/350F /Gas 4. Grease three or four baking
sheets. Sift the flour, bicarbonate of soda, baking
powder and salt into a mixing bowl. Set aside.
With an electric
mixer, cream the butter or margarine and the sugars
together. Add the egg and vanilla, and beat until
light and fluffy. Add the flour mixture and beat on
low speed until thoroughly blended. Stir in the
rolled oats and plain chocolate chips, mixing well
with a wooden spoon. The dough should be crumbly.
Drop heaped
teaspoonfuls on to the baking sheets, about
2.5cm/1in apart. Bake until just firm around the
edges but still soft in the centers, about 15
minutes. With a palette knife, transfer the biscuits
to a wire rack to cool.
