Blueberry Streusel Slice
Ingredients
225g/8oz short crust pastry
50g/1/2 cup plain flour
1.5ml/1/4 tsp baking powder
40g/3 tbsp butter or margarine
25g/2 tbsp fresh white breadcrumbs
50g/1/3 cup soft light brown sugar
1.5ml/1/4 tsp salt
50g/4 tbsp flaked or chopped almonds
30ml/4 tbsp blackberry or bramble jelly
115g/1 cup blueberries, fresh or frozen
Method:
Preheat the oven
to 180C/350F /Gas 4. Roll out the pastry on a
lightly floured surface and line an 18 x 28cm/ 7 x
11in Swiss roll tin. Prick the base evenly with a
fork.
Rub together the
plain flour, baking powder, butter or margarine,
breadcrumbs, sugar and salt until really crumbly,
then mix in the almonds.
Spread the pastry
with the jelly, sprinkle with the blueberries, then
cover evenly with the streusel topping, pressing
down lightly. Bake for 30-40 minutes, reducing the
temperature after 20 minutes to 160C/325F/Gas 3.
Remove from the
oven when golden on the top and the pastry is cooked
through. Cut into slices while still hot, then allow
to cool.
