Recipes - Banana Chocolate Brownies
Ingredients
75g/5 tbsp cocoa powder
15ml/1 tbsp caster sugar
75ml/5 tbsp milk
3
large bananas, mashed
215g/1 cup soft light brown sugar
5ml/1 tsp vanilla essence
5
egg whites
75g/3/4 cup self-raising flour
75g/2/3 cup oat bran
icing sugar, for dusting
Method:
Preheat the oven
to 180C/350F /Gas 4. Line a 20cm/8in square cake
tin with non-stick baking paper.
Blend the cocoa
and caster sugar with the milk. Add the bananas,
soft brown sugar and vanilla essence. Lightly beat
the egg whites with a fork. Add the chocolate
mixture and continue to beat well. Sift the flour
over the mixture and fold in with the oat bran. Pour
into the prepared tin.
Cook in the oven
for 40 minutes, or until firm. Cool in the tin for
10 minutes, then turn out on to a wire rack. Cut
into squares and lightly dust with icing sugar
before serving.
