Biscuits, Bars And Cookies Recipes - Apricot Yogurt Cookies

Ingredients

  • 175g/1 1/2 cups plain flour

  • 5ml/1 tsp baking powder

  • 5ml/1 tsp ground cinnamon

  • 75g/1 cup rolled oats

  • 75g/1/2 cup light muscovado sugar

  • 115g/1/2 cup chopped ready-to-eat dried apricots

  • 15ml/1 tbsp flaked hazelnuts or almonds

  • 150g/2/3 cup natural yogurt

  • 45ml/3 tbsp sunflower oil

  • demerara sugar, to sprinkle


Method:

  1. Preheat the oven to 190C/375F. Lightly oil a large baking sheet.

  2. Sift together the flour, baking power and cinnamon. Stir in the oats, sugar, apricots and nuts.

  3. Beat together the yogurt and oil, then stir evenly into the mixture to make a firm dough. If necessary, add a little more yogurt.

  4. Use your hands to roll the mixture into about 16small balls, place on the baking sheet and flatten with a fork.

  5. Sprinkle with demerara sugar. Bake for 15-20 minutes, or until firm and golden brown. Transfer to wire rack to cool. Store in an airtight container.
