Basic Desserts Recipes - Marzipan

Ingredients

  • 225g ground almonds

  • 115g caster sugar

  • 115g icing sugar, sifted

  • 5ml lemon juice

  • a few drops of almond essence

  • 1 eggs, or egg white


Method:

  1. Stir the ground almonds and sugars together in a bowl until evenly mixed. Make a well in the centre and add the lemon juice, almond essence and enough egg or egg white to mix to a soft but firm dough, using a wooden spoon.

  2. Form the marzipan into a ball. Lightly dust a surface with icing sugar and knead the marzipan until smooth. Wrap in clear film or store in a polythene bag until needed. Tint with food coloring if required.
