Citrus: replace the water with
orange, lemon or lime juice
Chocolate: sift 10ml cocoa
powder with the icing sugar
Coffee: replace the water with
strong, liquid coffee
Method:
Sift the icing
sugar into a bowl. Using a wooden spoon, gradually
stir in enough water to obtain the consistency of
thick cream.
Beat until
white and smooth, and the icing thickly coats
the back of the spoon. Tint with a few
drops of food coloring, if desired, or flavor
the icing as suggested above. Use immediately to
cover the top of the cake.
