Basic Desserts Recipes - Butterscotch Frosting

Ingredients

  • 75g unsalted butter

  • 45ml milk

  • 25g soft light brown sugar

  • 15ml black treacle

  • 350g icing sugar, sifted

  • For the flavorings

  • Citrus: replace the treacle with golden syrup and add 10ml finely grated orange, lemon or lime rind

  • Chocolate: sift 15ml cocoa powder with the icing sugar

  • Coffee: replace the treacle with 15ml coffee granules


Method:

  1. Place the butter, milk, sugar and treacle in a bowl over a pan of simmering water. Stir until the butter and sugar melt.

  2. Remove the bowl and stir in the icing sugar. Beat until smooth and glossy. For flavoring, follow instructions above.

  3. Pour over the cake, or cool for a thicker consistency.
