Basic Desserts Recipes - Quick-mix Sponge Cake

Ingredients

  • 115g self raising flour

  • 5ml baking powder

  • 115g soft margarine

  • 115g caster sugar

  • 2 eggs

For the flavorings

  • Chocolate: 15ml cocoa powder blended with 15ml boiling water

  • Lemon: 10ml grated lemon rind


Method:

  1. Preheat the oven to 160.C/325"F/Gas 3. Grease a 20cm/8in round cake tin, line the base with greaseproof paper and grease the paper.

  2. Sift the flour and baking powder into a bowl. Add the margarine, sugar and eggs with the chosen flavorings, if using.

  3. Beat with a wooden spoon for 2-3 minutes. The mixture should be pale in color and slightly glossy.

  4. Spoon the mixture into the cake tin and smooth the surface. Bake in the centre of the oven for 30-40 minutes, or until a skewer inserted into the centre of the cake comes out clean. Turn out onto a wire rack, remove the lining paper and leave to cool completely.
