Chocolate: 15ml cocoa powder
blended with 15ml boiling water
Lemon: 10ml grated lemon rind
Method:
Preheat the oven
to 160.C/325"F/Gas 3. Grease a 20cm/8in round cake
tin, line the base with greaseproof paper and grease
the paper.
Sift the
flour and baking powder into a bowl. Add the
margarine, sugar and eggs with the chosen
flavorings, if using.
Beat with a
wooden spoon for 2-3 minutes. The mixture should be
pale in color and slightly glossy.
Spoon the mixture
into the cake tin and smooth the surface. Bake in
the centre of the oven for 30-40 minutes, or until a
skewer inserted into the centre of the cake comes
out clean. Turn out onto a wire rack, remove the
lining paper and leave to cool completely.
